Ingredients
- 1 ½ tsp. (7 mL) canola oil
- 1 tbsp. (15 mL) lemon or lime juice
- 1 ½ tsp. (7 mL ) honey
- 3/4 tsp. (3 mL ) curry powder or paste
- 1 can 3.5 oz. (106 mL) Bonduelle Chickpea Mini Cans
- 3/4 cup (180 mL) cauliflower florets
- 1/2 cup (125 mL) cherry or grape tomatoes, cut in half
- 1 tablespoon (15 mL) chopped red onions
- 1 tbsp. (15 mL) raisins
- 1 tablespoon (15 mL) natural almonds, coarsely chopped
- 1 cup (250 mL) baby spinach
- Salt and freshly ground pepper
Method
- In a bowl, combine oil, lemon juice, honey and curry powder.
- Add remaining ingredients, stir and season to taste.
