INDIAN STYLE CHICKPEA SALAD

Ingredients

  • 1 ½ tsp. (7 mL) canola oil
  • 1 tbsp. (15 mL) lemon or lime juice
  • 1 ½ tsp. (7 mL ) honey
  • 3/4 tsp. (3 mL ) curry powder or paste
  • 1 can 3.5 oz. (106 mL) Bonduelle Chickpea Mini Cans
  • 3/4 cup (180 mL) cauliflower florets
  • 1/2 cup (125 mL) cherry or grape tomatoes, cut in half
  • 1 tablespoon (15 mL) chopped red onions
  • 1 tbsp. (15 mL) raisins
  • 1 tablespoon (15 mL) natural almonds, coarsely chopped
  • 1 cup (250 mL) baby spinach
  • Salt and freshly ground pepper

Method

  1. In a bowl, combine oil, lemon juice, honey and curry powder.
  2. Add remaining ingredients, stir and season to taste.
