Ingredients
- 1 tbsp. (15 mL) mayonnaise
- 2 tsp. (10 mL) lime juice
- 1 green onion, chopped
- 1 pinch ground chipotle pepper or mild or hot smoked paprika
- Salt
- 1 can 3.5 oz. (106 mL) Bonduelle Mini Cans CORN
- 1 ½ cups (375 mL) baby spinach
- 3/4 cup (180 mL) minced red cabbage
- 2 tbsp. (30 mL) fresh coriander or fresh basil, coarsely chopped
Method
- In a bowl, mix the mayonnaise with lime juice, green onion, chilli and a little salt.
- Add a little salt.
- Add remaining ingredients, stir and serve.
