CHIPOTLE CORN SALAD

Ingredients

  • 1 tbsp. (15 mL) mayonnaise
  • 2 tsp. (10 mL) lime juice
  • 1 green onion, chopped
  • 1 pinch ground chipotle pepper or mild or hot smoked paprika
  • Salt
  • 1 can 3.5 oz. (106 mL) Bonduelle Mini Cans CORN
  • 1 ½ cups (375 mL) baby spinach
  • 3/4 cup (180 mL) minced red cabbage
  • 2 tbsp. (30 mL) fresh coriander or fresh basil, coarsely chopped

Method

  1. In a bowl, mix the mayonnaise with lime juice, green onion, chilli and a little salt.
  2. Add a little salt.
  3. Add remaining ingredients, stir and serve.
